In a food processor, combine the flour, paprika, salt, and pepper. | |

Pulse in the butter pieces to make coarse meal. | |

Add the cheese. | |
|
With the machine running, pour in the cream to create a dough. | |
|
Remove the dough, form it into a ball, and refrigerate for at least 1 hour, or up to 3 days. | |

Preheat oven to 325*F | |
|
Roll out section of the dough, 1/8 inch thick on a floured surface. | |
|
Cut with cookie cutter into shapes. | |
|
Place them on ungreased baking sheets and bake until lightly browned (I've found about 20 min), reversing the pans to promote even browning. | |
|
Remove, cool on racks, and store them in airtight containers or freeze, tightly cover for up to a month. |
